APRICOTS IN A JACKET

Ingredients
Apricots in Jacket 1 lb small apricots
1 sugar cube for each apricot
3 ½ oz. butter
5 1/4 oz. all purpose flour
Dash of salt
2 eggs
3 ½ oz bread crumbs (plain, fine, dry)
3 tbsp. powdered sugar

Instructions
1. Wash the apricots. Dry them and cut each apricot in half.
2. Remove the pits from the apricots and replace the pit with a sugar cube.
3. Bring 1 ½ cups water to a boil and allow 2 tbsp. butter to melt in hot water.
4. Add flour and salt to water all at once and stir until a ball of dough has formed.
5. Remove the pan from the heat and allow the dough to cool down slightly. Stir eggs through the dough one at a time.
6. Form the slightly cooled dough into a roll and cut into as many slices as there are apricots.
7. Flatten each piece of dough and wrap around the apricots.
8. Bring 8 cups water to a boil, add the wrapped apricots and allow to cook for about 10 minutes. The balls will float to the top when they are done.
9. Melt the remainder of the butter and sprinkle the bread crumbs in the melted butter, stirring until bread crumbs are golden brown.
10. Remove the apricot balls from the water and drain well.
11. Sprinkle the balls with the bread crumbs and powdered sugar.
