SWEET & SOUR VEGETABLES WITH SPICY OMELET AND NUT RICEIngredients
1 box white rice (four servings)4 eggs Conimex Sambal Tjampoer (or sambal of your choice) Conimex Wok Oil 1 lb. mixed stir fry vegetables (fresh) Conimex Sweet & Sour Wok Sauce 1 cup mixed salted nuts Instructions 1. Cook the rice according to package directions. 2. Beat the eggs in a bowl until lightly foamy. Stir in 1-2 tbsp. sambal. 3. Heat 1-2 tbsp. oil in large frying pan with non-stick surface. 4. Pour half of the egg mixture into the pan, turn heat down low and bake the omelet until the bottom begins to turn golden brown and the top is nearly dry. 5. Slide the omelet onto a plate, keep warm. Prepare the second omelet in the same manner. 6. Heat a large wok, add 1 - 2 tbsp. wok oil and wok the vegetables for approximately 5 minutes. 7. Add 10 tbsp. wok sauce and wok an additional minute. 8. Roll up the omelets and cut into thin slices. 9. Coarsely chop the nuts and mix with the warm rice. 10. Spoon the rice onto 4 warmed plates. Ladle the sweet & sour vegetables on top of the rice. Divide the omelet strips over the four plates. Serves 4 Preparation time is about 20 minutes Note: Serve Conimex kroepoek alongside. |
