BRUSSELS SPROUTS & SMOKED SAUSAGE GRATIN

Ingredients
2 lbs. brussels sprouts
1 smoked sausage link
2 Tbsp. butter
1 Tbsp. flour
½ cup milk
pinch of sugar
pinch of nutmeg
½ tsp. salt
1 egg, lightly beaten
1 Tbsp. finely chopped parsley
2 oz. grated cheese

Instructions
1. Clean & wash brussels sprouts.
2. Cook in boiling water until tender crisp. Pour the boiling liquid from the sprouts, reserving ½ cup.
3. Preheat oven to 375 F
4. Heat 1 Tbsp. butter in a medium sized pan. Add flour & fry till golden. Stirring constantly, add the reserved sprout liquid & milk. Bring to a boil & then allow to simmer over low heat for about 5 minutes.
5. Remove sauce from stove & stir in sugar, nutmeg, salt & egg.
6. Place the sprouts & sausage into a greased oven dish & pour the sauce over top.
7. Sprinkle the parsley & cheese on top & break the remaining butter into tiny bits over the dish.
8. Place in the oven for about 15 minutes until the cheese becomes golden brown.
9. Serve with mashed potatoes.
