COD IN MUSTARD SAUCE

Ingredients
1 ½ lbs. cod filet
juice from 1 lemon
1 tbsp. flour
1 tbsp. butter + 1 tbsp. butter
1 cup milk
2 tbsp. mustard
½ tsp. salt
2 dashes pepper
pinch of nutmeg
1 tbsp. finely chopped parsley
1 tsp. paprika

Instructions
1. Preheat oven to 425 degrees.
2. Rinse cod under cold running water, pat dry with paper towels and sprinkle with the lemon juice.
3. Grease large oven dish.
4. In a small pan melt 1 tbsp butter and stir in the flour. Add milk slowly, stirring continually. Bring to a boil and then allow to simmer for a few minutes.
5. Remove from heat and stir in mustard, salt, pepper and nutmeg and finally the parsley.
6. Sprinkle both sides of the cod filet with salt and place in oven dish.
7. Sprinkle top of cod with paprika.
8. Pour the sauce over the cod and crumble second 1 tbsp. butter over it.
9. Place oven dish in middle of oven and bake for 15 - 20 minutes.

Serves 4

Note:
Once dish has been removed from oven it can be garnished with additional parsley and/or lemon slices.
Serve with mashed potatoes and mixed salad.
