BOEMBOE BALI IKAN (Indonesian Fish Dish)

Ingredients
1 lb cod (or substitute fish of your choice )
salt
pepper
2 x 2 tbsp lemon juice (adjust according to your own taste)
1/4 cup flour (approximately - enough to dust the fish with)
olive oil
2 large onions (finely chopped)
2 tsp. Conimex Sambal Oelek
½ tsp. Conimex Laos
½ tsp. Conimex Djahé
2-3 tsp brown sugar
dash of Conimex Ketjap Manis
2 tbsp tomato puree
½ cup water

Instructions
1. Rub the fish in with the salt, pepper and 2 tbsp lemon juice.
2. Dust the fish with the flour.
3. Fry fish golden brown in the olive oil. Remove and keep warm.
4. Fry the onion along with the Sambal Oelek, Laos and Djahé.
5. Once the onion is golden brown add the sugar, Kejap Manis and remaining 2 tbsp lemon juice and mix well into a sauce.
6. Add tomato paste and water once again mixing well. Bring sauce back to a good simmer.
7. Carefully place the fish in the sauce and allow to simmer for about 5 minutes until done.
