BELGIAN ENDIVE & MANDARIN SALADIngredients4 small heads Belgian endive juice from one lemon 3 seedless mandarin oranges juice from one mandarin orange salt & pepper to taste 1 tbsp wine vinegar 2 tbsp virgin olive oil 1 ½ oz almond slivers Instructions 1. Wash the Belgian endive & dry carefully. 2. Cut each head lengthwise and remove the hard core. 3. Cut endive into 3/4 inch strips. 4. Place endive in bowl and sprinkle with lemon juice. Toss lightly with fingers so that juice covers all surfaces of endive to keep it from turning brown. 5. Peel mandarin oranges & remove all white threads carefully. Divide into segments and cut segments in half. 6. Sprinkle mandarin oranges over the Belgian endive. 7. Mix mandarin orange juice with salt, pepper & wine vinegar. 8. Whisk olive oil into juice/vinegar mixture. 9. Pour over salad and carefully toss. 10. Lightly toast the almond slivers and sprinkle on top of salad. |
