Salad

ATJAR TJAMPOER

To be used as a side dish of an Indonesian dinner. One could call it a pickled salad.

Ingredients
Vegetables:
½ cup shredded white cabbage
½ cup shredded carrots
1 cucumber (diced)
½ cup ½ pieces green beans
½ cup cauliflower flowerlettes
sugar
olive oil or vegetable oil
2 1/4 cups vinegar

Spices:
1 tsp. koenjit
1 tsp. garlic
1 tbsp. ginger
4 kemirie nuts
1 finely chopped onion
salt

Instructions
1. Rub the spices as fine as possible and fry in the oil.
2. Add vinegar and sugar according to your own tastes and bring to a boil.
3. Add carrots, cabbage and beans.
4. When above vegetables are almost done add cucumber and cauliflower.
5. Do not boil this mixture for too long as the vegetable must remain crisp.

Cool and then pour into glass jar which can be covered tightly. It is always possible to add additional sugar to an atjar if you do not find it sweet enough.
